Santoku/Bunka

Santoku 三徳 is one of the four types of multi-purpose Japanese kitchen knives; Santoku, Bunka, Gyuto, and Kiritsuke. It is typically available in lengths of 165mm, 170mm and 180mm. It is suitable for basically anyone, but generally designed for the domestic cooks because it is shorter in length than Gyuto knives. It is nimble and easy to use. Santoku translates to ‘Three Virtues’’ which are meat, fish and vegetables.

Bunka 文化 is basically a Santoku with the slashed tip or often called K (Kiritsuke)-tip. It is nimble and easy to use. It was born during a period that Japan was modernizing by the western influences and translates to ‘Culture’ which was interchangeably meant modern in the old days in Japan.
