Sujihiki 筋引き is a slicer or carving knife that is perfect for carving and slicing proteins including roasted and raw meats and fish. It is typically available in lengths of 240mm to 300mm and allows you to slice with one long motion instead of multiple sawing motions. The short height reduces contact area with food, so it separates food easier than taller blades. Sujihiki Translates to “Meat Grain Slicer”.
