Basic knowledge of sharpening
Fundamental sharpening process, types of cutting edges, mechanisms, whetstone grits and types, common pitfalls, etc.

Practical Skills
Assessing knife conditions, flattening stone, removing chips, determining and holding sharpening angles, sharpening, test cutting, how to touch up, etc.
